Maple BBQ Chicken with Brussell Sprouts & Green Apple; Roasted Carrot Fries

This was a good dish. But not on my top 5. Here’s why. One of things I am loving about Green Chef is that it is opening us up to new ideas, different techniques and foods we would normally not try.  This is a chicken breast.  I love chicken but we have cooked chicken 50 million different ways. So nothing new there. They wanted us to eat the shredded Brussels sprouts raw. I don’t know why, they taste horrible raw.  After I seared the chicken, I threw the Brussels in the pan and sautéed them for a minute or two. Then threw them in a bowl with the apple and dressing. So much better cooked than raw.  This dish was good but it’s been done before.  New shipment is coming in on Tuesday.

Southwest Shrimp Salad with Homemade crackers, avocado and creamy pepita dressing.

This was like a shrimp taco salad. Yummy.  The only thing that took so long was making the crackers. They were ok.  They were better as croutons than crackers.  Break them up and put in the salad. This was a good dish. I ate all my shrimp. For those who know me, they know that is saying a lot. 🙂  It was a little bit spicy so we only gave our boy some avocado.  Aside from the crackers, this was a very fast dish and we definitely can make this again especially when you are hungry and want something quick.

Steak Collard Fajitas with bell peppers, chimichurri sauce and turnip rice

Holy Cow was this yummy!!! I will admit I was skeptical about the collard greens, especially since we weren’t cooking them and going to eat them raw. But it turned out well, didn’t even realize we were eating greens just tasted like lettuce. Let me get back to the star of this dish, the steak! Yum yum yum!!! And that chimichurri sauce was so delicious. I spread that on the collard green, put some steak and peppers on it and rolled it up. The rice was good too.  This dish was a win win. It will be making a come back for sure!

Homemade version of BBQ Pork Meatloaf with Roasted Parsnips and Asparagus

We loved the pork meatloaf so much we figured we’d make it ourselves.  It was still really good and juicy. What is nice about this meal we can share it with our son and he loves it as well.

PS I haven’t been keeping up with blogging our dinners.  That’s why this review is so short.

Pressure Cooker Dinner!  Tonight hubby made pesto angel hair pasta with chicken in the pressure cooker.  It was really good. Even better the next day.  I do love the days when dinner is ready when I come home. I’m usually hungry when I walk through the door so having dinner ready is a huge bonus.

Tonight was a fend for yourself kind of night.  My husband is sick, my son is teething and I end up waiting till my son goes to bed before I can eat.  This is the norm at least twice a week. I don’t mind it.  Although by the time I do get to eat, I really am not that hungry and end up with a little something like peanut butter on an English muffin. Oh well, tomorrow is another day.

I changed our delivery date on Green Chef to Tuesday. Before they were delivering on Thursdays. No fancy recipe pictures till next week unless my husband and I come up with some creative between now and then.

chicken pineapple

Chicken Pineapple with green pepper on top of shredded carrots and cabbage.

Delicious!! I loved this.  I could eat this once a week.  It had a Chinese flair to it.  Kinda like sweet and sour.  The pineapple gave it just enough sweetness to not over power the dish.  Who would have thought shredded carrots and cabbage would be the “rice”.  You needed 2 pans for this, one for the chicken, pepper and pineapple sauce.  The other for the cashews, then onion and shredded carrots and cabbage.  In total it took about 45 minutes.  You could make this dish spicy but we toned it down since my mother in law was eating with us and she doesn’t like anything spicy.  I can see us making different versions of this dish.  Can you tell I’m excited about this one?? lol

parsnip

I admit I wasn’t feeling well when I got home and didn’t feel like making our chicken. So dinner ended up being Kraft Mac & Cheese. To give it a healthy kick, my husband chopped up parsnips, carrots and asparagus and baked them for us to have as a side dish.  These are yummy and we will be eating more like this. So healthy and yummy.  This weekend we are going to make “chips” for us to snack on at night when we get the munchies.

Persian Sole with Spinach, Pistachios & Cranberries; Turnip Rice

I never look forward to the fish dinners as I really don’t like fish.  But I’m willing to try it and hope I find one I like.  I was definitely looking forward to trying the turnip rice.  We’ve had cauliflower rice before but turnip rice was new.  Thankfully the turnip rice came already cut up.  It was very easy to make with oil and seasonings.  Later added in some coconut milk and simmer.  This was probably the easiest dinner we’ve made.  Throw the spinach in a bowl with nuts and cranberries.  Sprinkle on some seasoning to the fish and back.  The seasoning was sumac.  The dressing was for the salad and fish. My husband was not a fan of it at all.  I kinda liked it.  The dressing yes the fish not so much.  At first I was like this isn’t bad, then I took a bigger bite and boy oh boy was it fishy.  The rice and salad grew on me.  If it had a different seasonings we would have been all of it.  Later on, we were eating McDonalds.

Montreal Steak with Roasted Parsnips and Peppers with Veggie Gratin

This was a really good meal. The steak was yummy.  We have recently rediscovered parsnips, so we were excited to see how they were cooked.  The surprising factor in this meal was the rainbow chard. First time for me. My husband has cooked it before, but never turned out well. I think the almond bread crumbs really helped out.  Win, win all around and very satisfying.
